This course is meant for both young and old people whose passion is to learn a unique skill. Course Outline

1. Making Soups, Salads & Sauce: Good stock - a rich broth made with seafood, meat, poultry, or vegetables - is essential not only to soups and sauces but also to countless other dishes. In this course, students learn how to properly prepare and season stocks, soups, and sauces, and they master fundamentals like making a roux and preparing a mirepoix.

2. Meat Preparation: Encompassing beef, lamb, and veal, courses on meat preparation teach students how to differentiate between cuts of meat, how to determine the appropriate cooking method, and how to anticipate the results. Students typically learn a wide array of preparations, including grilling, roasting, frying, stewing, sautéing, and braising.

3. International Cuisine: Most formal culinary education programs use French gastronomy as their foundations, but as the world gets smaller and smaller, it's become vital that chefs are trained in a variety of culinary traditions. At the certificate level, courses in international cuisine introduce students to the basic flavors, ingredients, and techniques found in culinary traditions from around the globe.

Course Prospects: Graduates of this course take on positions in establishments such as hotels, restaurants, cruise lines, among others. They can also be self-employed as personal chefs or start a catering business. We have also seen family kitchens, dining tables, and people's lives transformed as a result of learning to prepare nutritious foods. Ladies who have challenges preparing food at home can enroll in a 3 months program and this could save a marriage!! Food is the best medicine for the human body. Learning food nutrients and preparation saves hospital bills and also saves a life. The earlier you get to know what you eat and how you prepare what you eat for life, the better for your longevity. Young people have taken on Catering and Cooking courses during their vacation and this does not only equip them with catering and cooking skills, but it also introduces them to the food they eat and also helps them to know the food value. Our Young Chef's Club plays a major role in bringing together students who have completed their Form 4 or Form 6 and are passionate about cooking. Duration: 3 months ( 3 days of Lectures, 2 days of practicals per week for 3 weeks, and 1 day in a fortnight for 2 months then a final assessment, and then an Award.
